Today’s healthy recipe is one of my favourite dinners. It takes next to no time to make at all and is perfect as part of your weightloss plan or healthy diet.
For the Mexican Chicken
- 500g of chicken diced
- 1 tbsp of paprika
- 1 tbsp of garlic powder
- 1 tbsp of chilli flakes
- 1 tbsp of coriander
- 1 tbsp of cumin
For the Mango Salad
- Mixed leaf salad
- 1 tomato
- 4 slices of red onion
- 1 mango
- Rainbow Salad (grated beetroot and carrot)
Fry your chicken with all of the herbs and spices. I personally fry in water rather than oil because it’s less fat.
Stir until cooked through
While the chicken is cooking chop your tomato, onion and mango and mix in a bowl with your mixed leaf salad.
Once the chicken is cooked throw everything together and voila, delicious salad!
- Mango salad is delicious with avocado and/or pine nuts if you are looking to increase your uptake of natural fats or if you just want to eat them because they’re delicious!
- Add some brown rice for a heartier meal, so yum!
