Those of you that follow me on Snapchat got a bit of a sneak peak today’s recipe which is sweet potato cakes. These are so so delicious (if I do say so myself!). You can serve them in so many ways depending on if you want them for breakfast, lunch or dinner! They were so good that I want to make more today!
- 2 x small sweet potato or 1 x large
- 3 medium size eggs
- 150g of lean bacon
- 1 quarter of red onion diced
- Frylite/olive oil spray
You’ll Also Need:
- Mixing bowl
- Frying pan
- Clean tea towl
- Baking paper
- Baking tray
Grate the sweet potato into a bowl
Fry your onion and bacon until onion is soft
Squeeze the sweet potato in a clean tea towel to get rid of any excess water
In a bowl mix your drained sweet potato with the bacon and onion mixture
Add your 3 eggs to the bowl and mix with your hands
Place some baking paper on a baking tray
Mould your sweet potato mixture into desired shape and put on baking tray
Place in an over at 180 degrees for 20 mins but turning your cakes over after 10 mins
You serve this like a healthy hash brown for breakfast with some eggs and avocado
You can serve like an option sandwich with chicken
You can serve this with a burger instead of a bun
These are so delicious whatever way you service them!
